Date Cake

Ingredients
Date Mixture
- 1 1/2 cup water
- 1 cup of dates (pitted)
- 1 tsp baking soda
Cake Mixture
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp cardamom
- 2 cups self-rising flour
- 1/4 tsp salt
Caramel Sauce
- 1 stick butter
- 1 2/3 cup brown sugar
- 1 1/2 cup heavy cream
- 1/2 tsp vanilla extract
- Pinch of salt
- 1/4 tsp nutmeg
Instructions
Cake Batter
- Soak the dates in the boiling water and baking soda for about 10 minutes
- Once they are soaked, add them to a blender and blend until smooth.
- In a large mixing bowl, whisk together the eggs, butter, sugars, salt, baking powder, cinnamon, cardamom, and vanilla until smooth
- Alternate between adding in the date mixture and the self-rising flour
- Add the cake batter to a greased pan and bake at 350 until fully cooked. Test by inserting a toothpick into the center of the cake, it should come out clean.
- Allow the cake to cool for 10 minutes before pouring the caramel sauce on the cake.
Caramel Sauce
- In a medium-sized pot melt butter over medium heat
- Add in the brown sugar, salt, and nutmeg and incorporate them into the melted butter
- Add in the vanilla extract
- Add in the heavy cream and whisk until completely smooth
- Increase the heat and allow the mixture to come to a light boil
- Once it thickens and becomes a dark brown color, remove it from the heat and allow it to cool down slightly
