Ingredients

Date Mixture
  • 1 1/2 cup water
  • 1 cup of dates (pitted)
  • 1 tsp baking soda
Cake Mixture
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp cardamom
  • 2 cups self-rising flour
  • 1/4 tsp salt
Caramel Sauce
  • 1 stick butter
  • 1 2/3 cup brown sugar
  • 1 1/2 cup heavy cream
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1/4 tsp nutmeg

Instructions

Cake Batter

  • Soak the dates in the boiling water and baking soda for about 10 minutes
  • Once they are soaked, add them to a blender and blend until smooth.
  • In a large mixing bowl, whisk together the eggs, butter, sugars, salt, baking powder, cinnamon, cardamom, and vanilla until smooth
  • Alternate between adding in the date mixture and the self-rising flour
  • Add the cake batter to a greased pan and bake at 350 until fully cooked. Test by inserting a toothpick into the center of the cake, it should come out clean.
  • Allow the cake to cool for 10 minutes before pouring the caramel sauce on the cake.

Caramel Sauce

  • In a medium-sized pot melt butter over medium heat
  • Add in the brown sugar, salt, and nutmeg and incorporate them into the melted butter
  • Add in the vanilla extract
  • Add in the heavy cream and whisk until completely smooth
  • Increase the heat and allow the mixture to come to a light boil
  • Once it thickens and becomes a dark brown color, remove it from the heat and allow it to cool down slightly
