Starbucks Pumpkin Loaf
Lately, I have been OBSESSED with the pumpkin loaf cake from Starbucks. With pumpkin season coming to an end soon I wanted to make my own version of these that I can enjoy year-round.
Ingredients
- 3 eggs
- 1/4 cup oil
- 1/2 cup milk
- 1/4 tsp vanilla
- 1 can pumpkin puree (15oz)
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 tbsp pumpkin spice
- 1/2 tsp cinnamon
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 2 cups flour
Instructions
- In a bowl whisk your eggs until combined
- Add in all the wet ingredients and mix together
- Add in the cinnamon, pumpkin spice, vanilla, and salt. Mix together
- Add in one can of pumpkin purée (15 ounces)
- Add in the brown and regular sugar and mix together until smooth
- Slowly incorporate the flour into the mixture
- Pour the mixture into the parchment paper lined pans and sprinkle some pumpkin seeds on top
- Bake at 350 degrees for 25 minutes or until a toothpick inserted in the center comes out clean
